Why the human is the point

There is a sound a good tortilla makes, a soft sigh as it meets the hot comal, and a tortilla maker listens for it the way a musician listens for a note. She pats the masa between her palms or presses it thin, feeling for the moment the dough is ready to breathe. The corn was likely soaked and ground with care, nixtamalized the old way, so the whole round carries the flavor of a process that cannot be hurried. When it puffs, that is her doing, a small daily miracle repeated by hand a hundred times before lunch. Fold one warm off the griddle and you are tasting a person, a place, and a morning of work.
