Why the human is the point
Somewhere upstream of every meal is a person who knelt in the dirt at dawn. A small-farm grower cannot hide behind scale; they taste as they pick, pull the row that isn't ready, and stake their name on the crate at the market. The tomato that actually tastes like a tomato comes from someone who chose flavor over shelf life, again and again, for a whole season. You are not buying produce. You are eating the judgment of a person who cared.
