Why the human is the point

Twelve tickets hang at once and every one is somebody's dinner, cooked to a memory they can't quite name. A line cook holds the whole board in their head, times six pans by feel, and plates the last one as if it were the first. The heat, the speed, the small pride in a dish that tastes like somewhere and not just of salt: that is a person at the top of a craft, in real time, with no undo. You taste the difference.
