Tofu maker
A person coaxes soybeans, water, and time into something silken that carries whatever kindness you cook into it.

Why the human is the point
Making tofu looks like alchemy and is really attention. A tofu maker soaks and grinds the beans, cooks the milk without scorching it, and adds just enough coagulant to turn a pot of white liquid into tender curds. Then comes the pressing, cloth folded over a wooden box, weight added by feel, water running clear as the block finds its firmness. Do it by hand and the tofu tastes of the bean itself, sweet and grassy and alive, nothing like the blank cubes most people assume it must be. It is quiet, patient work, and the reward is a food that has fed people gently for two thousand years.
