Why the human is the point
A sausage maker starts with respect for the whole animal and turns what others waste into something people crave. It is a craft of ratios and feel, the right fat to lean, salt weighed carefully, spices bloomed and tasted before a single casing is filled. Then the hands take over, coaxing the mixture into the casing without tearing it, twisting off links with a rhythm that looks easy and is not. Every family and region has its own version, so a good link tells you where the maker learned and who taught them. Cooked over fire, it tastes of that knowledge, seasoned by a person who cared how it came out.
