Why the human is the point

A pretzel begins as a plain rope of dough and becomes, in a few practiced seconds, that familiar knot a good baker can tie almost without looking. The baker rolls it thin at the ends and fat in the belly, crosses it, and presses the twist so it holds through the bath and the oven. That bath, a quick dip that gives the crust its deep mahogany color and its snap, is the step that turns bread into a pretzel, and it takes a steady, unhurried hand. Fresh from the oven, salt still catching the light, it is soft where you expect crisp and chewy where you expect soft. Someone shaped that by hand this morning, and you can taste the practice in every bend.
