Why the human is the point

Flour piled on a board, a well cracked open with eggs, and two hands that know exactly when the dough stops being sticky and starts being silk. A pasta maker reads the day by feel, adding a little flour when the air is damp, resting the dough when it needs to relax, and rolling it thinner than seems wise. Every sheet carries the small signature of the person who made it, the faint texture of a rolling pin, the imperfect edge of a hand-cut tagliatelle. Boil it, and you can taste the hands that made it. It is one of the oldest ways a person has said, sit down, I made this for you.
