Why the human is the point

A gelato maker builds flavour from the base up: real milk, real fruit at its peak, sugar balanced so it scoops soft and clean instead of freezing hard. They churn it slower and warmer than ice cream so it stays dense and silky, and they taste constantly, adjusting a pistachio or a lemon until it says exactly what they want it to say. Trays go into the case fresh through the day, so what you point at was made that morning by the person behind the counter. There is real skill in the scoop too, the wrist that lays it onto the cone in one soft curl. Every flavour is a small decision about what tastes best right now, this fruit, this week. It is summer, made by hand, handed to you across the counter.
