Why the human is the point
A confectioner lives at the edge of a few crucial degrees, because sugar is generous right up until the second it burns, and reading that moment is the whole craft. They pull hot candy like taffy until it turns satiny, fold color through it, and roll pictures into rock so a whole cane says a word when you slice it. It is chemistry you can smell and timing you can only learn by hand, the pot, the marble slab, the fast cooling fingers. Every sweet carries the maker's judgment about heat and pull and flavor, and the good ones taste like someone was paying close attention. Small, edible, and gone in a minute, and still somehow made with a craftsman's whole care.
