Why the human is the point
A cheesemonger is a matchmaker who happens to work in dairy, guiding your hand across a counter of hundreds toward the one that will make your evening. They cut to the gram, wrap with a practiced fold, and can tell you which pasture and which season is in your mouth. Real mongers age and turn and tend their wheels, coaxing a rind along like a slow, delicious garden. Ask a question and you get a story, a taste, and usually a second taste you did not request but will be grateful for. It is generosity and deep knowing, offered a slice at a time, by a person who genuinely wants you to eat well.
