Why the human is the point
Between milk and cheese stands nothing but time and somebody's nerve. The cheesemaker works with living cultures that read the room: the cellar's damp, the season's grass, the maker's patience, and turns each wheel by hand through months of waiting. It is slow chemistry supervised by human judgment, and the wheel that emerges tastes like the exact place and year it waited in. That's not a recipe. That's a keeping.
