Why the human is the point

A supermarket sells fish in plastic; a fishmonger sells you the sea. They know which boat landed what this morning, what is in season, and which fish to steer you toward and which to save you from. They will fillet it while you wait and tell you how to cook it, because their name is on the freshness. It is old, honest trade: a person who handles the catch, remembers your usual, and would rather lose a sale than sell you a tired fish.
