Baker

Up before the town, hands in the dough, so the morning smells like somewhere.

Why the human is the point

Every town that still smells like morning owes it to somebody's alarm going off in the dark. Dough is alive; it sulks in the cold and races in the heat, and the baker negotiates with it daily, by hand. You can automate a loaf. You can't automate the corner at six a.m., lit and warm, where the day's first small kindness is handed over the counter.
